The St Huberts vineyard contains some of the oldest Cabernet vines in the Yarra Valley, with plantings dating back to the 1960s. For the 2010 Cabernet Sauvignon, fruit parcels were sourced primarily from vineyard sites located on the Yarra Valley flats - these sites provide the warmth required to produce rich, flavoursome characters in Cabernet Sauvignon. Individual vineyard parcels were fermented in a range of fermentation vessels to preserve the unique flavour and tannin profiles of the fruit. These parcels were then pressed off separately and racked into 100% French oak to develop further depth and complexity. 10% Merlot was blended to enhance this wines overall mouthfeel.
Tahbilk Cabernet Sauvignon releases consistently exhibit considerable richness and character with the noted potential to develop further complexity if cellared with the belief held by many experts that it is the best performed of the Tahbilk reds in terms of longevity. Complex and savoury, with crushed blackcurrant and plum fruits, mixed spice and a leafy freshness that persists alongside secondary flavours of leather and tobacco.
Named in honour of founder Eric Brand, one of the original ‘Blockers’ (landholders who sold their grapes to larger wineries in the 1950s and 60s). Our Blockers Cabernet is one of the icons of our range. Made in classic Coonawarra style, it is the perfect combination of rich fruit, complexity and elegance.
