The Serafino Malpas Vineyard has a unique story. Located along the Malpas Road Ridge with a southern aspect, the soils are dark black/brown loam over limestone. Improved irrigation and canopy management practices, have intensified the bright, rich, spicy fruit
from the vineyard.
The grapes upon delivery to the winery, were destemmed in preparation for whole berry fermentation. Cultured yeast was added post a cold soak of two days. This wine was made in open fermenters and gently pumped over twice a day during fermentation. The grapes remained on skins for ten days a time in which was determined by daily tasting. Pressed to barrels then allowed to settle for two days prior to filling barrels. Maturation in four year old French oak barrels for eight months gave minimal oak pick up, allowing the wine to express the characteristics.
Cinnamon and spice linger on the palate with long chalky tannins, bright flavours bursting with amazing freshness and texture. This wine is well structured and well balanced and only oaked to allow clear expression of its site characteristics. Full mid palate with underlying McLaren Vale ‘chocolate’ fruit cake.
